We’ve had two snow days this week, and I’m super sad to say I had to go back to work today.
I was loving the 3 of us all being home and playing all day. Spoiled me a little bit.
I felt like a little kid waiting to see if work was going to be cancelled the way I would if school was cancelled. Of course, there is no reason not to work, but when there is snow… you just want to play and snuggle!
I found a really good looking breakfast recipe the other day. Of course, I didn’t have all the ingredients. I was wanting to make something for our snow day, so I improvised and made it my own.
Enter my Buckwheat and Millet Apple Breakfast Bake. To die for!
Quick Sweet Potato, Lentil, Apple, and Zucchini Hot Salad. Because we needed something quick and hot!
After lunch, we headed out to see how the roads were.
That answered that….
But we made it to get a hot coffee, to the grocery store, and around town for a bit.
The snow is so pretty!
Leftover Curried Lentil and Potato Soup
No one wants to come in and cook after playing. Now, I need a new soup to make because it is so stinking cold here!
