by Brittany on October 31, 2012

Happy Halloween!

I hope you all are safe tonight if you are going out to a party or to trick-or-treat!

How fun is it that What I Ate Wednesdayis on Halloween??  Good thing it isn’t the day after or else my eats wouldn’t look so colorful.  ha!

Spooky Snacks and Healthy Halloween Treats

Thanks to the lovely Jenn for the link up!

This week… my appetite is back in full force!

Breakfast

Photo

Pumpkin brown rice porridge in a jar.  Nothing too spooky here.

Lunch

Photo 1

Egg omelete with mushrooms and spinach, roasted cushaw and broccoli, and toast.

Snack

Photo 2

Blueberry Pure Bar.  Can I get these in my trick or treat basket??

Dinner

IMG 1739

Vegan Meatloaf covered in “blood” with salad and roasted brussels.

Snack

Pumpkinlatte

I had Lauren’s Pumpkin Pie Steamer while watching The Voice.  #teamblake

Proteinmush

That didn’t satisfy me, so I went back for some pumpkin protein mush with banana, goji berries, hemp seeds, hazelnuts, almonds, sunflower butter, pumpkin butter, and whatever else I could get my hands on.  I was feeling adventurous!

Does anyone else get ravenously hungry at night, or is that just me??

What are you doing tonight for Halloween?  I’m handing out candy here at home.

What spooky eats or treats have you made?  Feel free to link up!

I’ve been watching The Voice the past couple days and this was the first time I’ve watched more than a few minutes. I’ve been enjoying it but was a little bummed that Aquile was sent home. He’s the lead singer in my friend’s band and I really think deserves to keep moving forward.

AW! I hated to see him go too. That’s awesome he is in your friend’s band!! You know some cool people!

Pumpkin brown rice porridge sounds awesome! Do you have a recipe for it?! As always love all the eats! Happy Halloween!

Brittany November 6, 2012 at 8:26 am

Thanks girl! It is essentially this recipe except creamy brown rice cereal instead of the buckwheat. :)

I’ll be handing out candy at home as well, but I don’t think that we’re going to get many kids this year, unfortunately :( I’m going to have to come up with a clever way to use up all of that candy… And I definitely get pretty snacky in the late afternoons and evenings… It’s not a rare thing for me to be constantly snacking.

Lots of yummy eats – as always! ;)

We have a “Costume Party” for the youth kids at our church tonight, so we’ll be there. Cody is giving hay rides to the kids, so we decided to be “the farmer” and “the farmer’s wife”. Ha! Easy enough! I will miss handing out candy to all of the cute trick-or-treaters this year though!

I’m passing out candy at my parents’ house, since I’m not sure how many kids we’ll get at our apartment. I’m excited, though, because I’ll get to see some of the kids that I used to babysit for!

I get hungry at night too! I’m supposed to go to a party tonight but its POURING rain, so I don’t know if I really want to brave all that. We’ll see later on! I’m so glad to hear your appetite is back. I hate when mine goes missing. Have a good night love!

OMG I am SO hungry at night. Like, I wake up in the middle of it because even though I was full when I went to bed, I’m hungry again. I blame this on running. (Although maybe I just really want to eat?)

Hemp + goji is one of my new favorite combos! YUM.

Also, I would like you to make me dinner.

I need to make that Pumpkin Pie Steamer – it’s been on my list. I eat a lot at night too – although it comes and goes for me. :)

OH that pumpkin pie steamer is to die for! Must try!!

We unfortunately don’t get trick or treaters at my apartment (probably because its a third floor walk up!), which makes me sad, but I plan to spend my Halloween in my pumpkin pj pants, with a cup of tea and watching Hocus Pocus on DVD. :)

Yum, double yum to lunch and love the “blood” touch at dinner :P I’m hoping we get some trick-or-treaters tonight but I’m not sure because of Sandy… If not, more dark chocolate for me and the hubby!

I’m always hungrier at night than during the day! Probably because I get super busy at work!

Reply

Brittany November 6, 2012 at 8:29 am

Maybe that’s my problem too??

I’m curious, what all do you put in your pumpkin brown rice porridge? It looks great!

And that pumpkin protein mush sounds delicious. I love mixing together a whole bunch of things. Some much variety in one bite! :D

I get insanely ravenous at night, so no, it’s not just you :)

Brittany November 6, 2012 at 8:30 am

I’m glad I’m not the only one that gets ravenous at night!!! My brown rice porridge is essentially this recipe except sub the buckwheat for creamy brown rice cereal. :)

Yum! Your food looks so balanced and colorful! I’m glad you’ve got your appetite back!

I also get really hungry at night. Most nights I end up having something extra after dinner, but my husband rarely does.

Thanks girl! I always have something at night after dinner too!! I’m a bottomless pit at night!

Ohh girl, my hunger always comes out full force @ night. I’m not sure why, but oh well that’s life :) haha

I like your outlook on it! I need to embrace the “that’s life” motto!

All of the food looks good- but the dinner makes my mouth water!
I have recently started using Earth Balance soy milk in my pumpkin pie steamers- and it’s even better!

Brittany November 6, 2012 at 8:33 am

mmmm!! Must try that! Come on over for dinner!! I would love to make you and your hubby vegan meatloaf. It would go along with your challenge very well!
