WIAW #21 Still Gone…

Are we really 1/2 way through October already and is it really What I ate Wednesday again already?!?!

Where is this year going???

My headaches are gone from last week, but my appetite still isn’t back.  I’m making sure to eat some good nutrient dense foods to make up for it.  I’m sure the sinus drainage is to blame for all this.  TMI??

Spooky Snacks and Healthy Halloween Treats

Breakfast

I made a new breakfast this week, and I can’t get enough of it!  This could be an awesome spooky snack or Halloween treat for the grown up or kids alike!

I made a huge pumpkin protein pancake topped with blueberries, banana, nut butters, and my new pumpkin butter.  Recipe tomorrow… I won’t make you wait long for this one!  

Lunch

Leftovers of Emily’s Kale and Roasted Vegetable Soup with avocado on top.  I used parsnip, leek, and cushaw instead of carrot, onion, and sweet potatoes.

Snack

I finally made Chelsey’s gluten free and vegan blueberry banana bread.  I don’t know why it has taken me so long to make this.  It is so good!

We have eaten over 1/2 the loaf in 2 days!  Whoops!  :)

How do you make sure you get in your nutrients when you don’t have an appetite?

I don’t often do muffins for breakfast but I’m all for pancakes from time to time. Especially pumpkin ones – yummy!

These are the only pancakes that keep me full! Usually I feel like I’m eating air!

I cannot believe we are halfway through October either. Crazy talk!!! Pancakes for sure for breakfast! Muffins are more of a snack :) Can’t wait for the recipe!

It pains me that you don’t have an appetite! [Is that weird? It's like telepathic empathy...telempathy?]

I’m glad you can still have parsnips on your diet. To be honest, I sometimes prefer them in soup. I get irrationally excited about them. And things like rutabega. And turnips.

I prefer parsnips too!! Can you teach me about rutabagas and turnips?? I have used turnips in soup but never touched a rutabaga!

Smoothies always help me pack in some nutrients when I’m not feeling well… Or soup! I’m sorry your appetite still isn’t back! I hope that changes soon. I’m definitely more of a pancakes girl for breakfast! Muffins are a good snack or dessert though!

Emily’s kale and vegetable soup will cure anything! Its one of my favorite blogger recipes – so comforting.

I think you are doing a good job getting some healthy options in there. Maybe some of the appetite loss is stress too. I know that will get me.

By the way, I have loved the hemp hearts. Not sure if they are helping with the shakes or not because my diet is all over the place, but I do think they make my oatmeal more filling.

Strangely I have been back on pancakes right now myself. I would say I am more of a muffin person in general…but occasionally the craving hits.

So here is the weird thing, I don’t know if it is the hemp hearts or not, but I do feel like breakfast is lasting longer (that is when I use them). I am trying to eat more in general since I tend not to under stress so that might be part of it as well.

If it is the hemp hearts that is giving a little better regulation during the day that is pretty amazing.

I still have no idea. I’m thinking it must be a food intolerance, but my Doctor and I haven’t totally figured it out though! Its really bizarre.

Delic eats! Especially the pancake and bread- my sweet tooth has been in overdrive lately and I cannot get enough aka pancakes for breakfast every day for the past few weeks :P At least they’re healthy and keep my belly full until lunch!

I love making smoothies or fresh juice when my appetite is off…you can pack SO much into one little glass! I haven’t really been cooking much lately…just “assembling” my meals from whatever I happen to find in the fridge. It’s quick, easy, and with the condiment/spice surplus I have in my kitchen, ALWAYS flavorful! :)

Muffins or pancakes? Really? I’m not even answering this! Lol
