WIAW #10 Something Old, Something New

Happy What I Ate Wednesday, friends!

So glad you all are liking my enchilada recipe!

I love trying new recipes, but these past few weeks have been incredibly busy!  I have fallen into a food rut, friends.  We have been eating the same ol’ meals week after week.  I probably wouldn’t have noticed if it hadn’t have been for WIAW!  Next week, my goal is to mix things up a bit!!

These are my Monday eats, because today was WAY too busy and quite frankly, I forgot to take pictures.

Breakfast:

I went with a usual… oats!  Since I had a bunch of peaches, black berries and raspberry from our trip to the farm, I added those after cooking and stirred in some coconut milk.  I also drizzled some on top and topped with almond butter, sunflower butter, and granola(unpictured). I live for my oat toppings…. can ya tell?

Lunch

Leftover Happy Herbivore’s Mexican Cabbage.  I made it with homemade tomatoes and jalapenos from our garden!!  I never get sick of this meal… even though I had it 2 weeks ago.

Snack:

I had a white peach plus a Pure Bar.  I love these white peaches!!  They remind me of a doughnut peach.

Dinner:

We decided to have breakfast for dinner!  I LOVE breakfast, so I was happy to oblige.  I found some turkey bacon at Trader Joe’s that I knew that Luvy would love!  It was nitrite and nitrate free, so I was thrilled to get it for him.

I had an egg and 2 egg whites, toast, fresh fruit, and some fresh sliced tomatoes from our friend’s garden.

The fruit, to me, was the star of the show!  So fresh and good!

An even bigger surprise was that I tried the turkey bacon!  It wasn’t that bad, but my tummy didn’t like it too well.  I am always willing to try new things, but I typically know what my tummy likes and what it doesn’t.

“Midnight” Snack:

I made a new to me microwave chocolate coconut flour muffin with fruit, nut butters, and almond milk.  This may be my new favorite snack…ever!  LOVE!

I seriously love white peaches,they taste so much better than their yellow siblings in my eyes! :)
I eat cottage cheese so often I cannot count the times actually. Gladly it’s easy to switch up because it’s so versatile – plain,savory with herbs and veggies,sweet with stevia and cinnamon,with peanut butter and/ or jam,with honey,with KETCHUP! :P Everything’s possible,and everything’s good. I love it.

I think I agree on the white peaches… however ketchup on cottage cheese not so sure! ;)

Love white peaches, especially doughnut ones! Favourite fruit of the moment. That midnight muffin looks epic, might have to give your recipe a go!

All of your eats look amazing. Cannot wait to try out your “midnight snack”. I don’t think I have any coconut flour though. Do you think some sort of other flour would work?

Not sure about that. I think on the post she made it with peanut butter flour too?? Let me know if you try something else!

I do tend to get in food ‘ruts,’ but I like to just call them fixations because a rut implies you aren’t happy where you are…and usuallyI’m quite content with the repetition. :)

I’m going to have to look up that Mexican cabbage recipe…looks incredible, and I love cabbage…

Also, aren’t oats really just a vessel for whatever we can put on top of them?

I eat the same things for breakfast and lunch pretty much every single day. haha! I pretty much only change this up at dinner time… ;)

Breakfast for dinner is my fave! Everything looks so good! I definitely get stuck in food ruts! I could eat the same thing all the time and never get sick of it! Since starting my blog I’ve been trying to branch out more but it is definitely a challenge for me!

I eat different things every week. My training plan is really strict, so I take it as a challenge to make as many creative “on plan” meals as possible. It makes my trainer roll his eyes, but I’m within the boundaries! LOL!

That lunch looks insane. Yum.
The way you arranged your fruits is so adorable. Love that.
I definitely tend to gravitate to the same usual food routine, so I try and switch it up so I don’t post the exact same thing everyday on the blog. That’s about all my inspiration though hah.

I’m starting to see more and more of these microwaveable muffins! Awesome! I don’t want to turn on the oven if I can help it. I don’t want to toast in my own house!! White peaches are my fav too! However, they’re quite expensive. I picked three at Whole Foods and it came out to over $6!!! I had to put it back..I was crushed..

Ouch!! These were the same price as the yellow, but I picked them myself. That really made them cheap!! :) I hate using my microwave, but I’m not turning on my oven here either! So hot!!!

Oh, absolutely! Oats, turkey bacon, nut butter, rice cakes, Greek yogurt ALL fall into my weekly rotation one way or another. But they all taste so good, that I can’t complain for long :D

That chocolate coconut flour muffin looks SO good!

For breakfast and lunch, I eat a lot of the same thing every week, and even every day! Dinner is where I try and get creative by browsing blogs and cookbooks for some ideas. It’s hard when you are cooking for 1 most of the time, but left-overs make a great lunch the next day!

Even cooking for 2 is that way! I always try to make leftovers so I don’t have to cook every night! Saves me time.. plus, leftovers are awesome!

Wowww Brittany, this food looks truly delicious!! Your breakfast, mmm to say the least! And yes to peaches in the summer, they are perfect right now! That reminds me, I have some baking to do with them when I return home :)
