I had a lot of comments on my meals yesterday, and I thought I would share my recipe for my stir fry with you all.
It is so simple, yet mind blowing!

Thai Style Stir Fry
- 1/4 onion, chopped
- 1 large carrot, chopped
- 3-4 mushrooms, chopped
- frozen broccoli– I eye balled the amount
- frozen sugar snap peas– I eye balled this too
- cooked lentils or chopped chicken
- cooked rice
- coconut aminos or tamari
- coconut oil
- curry paste
Place all your veggies in a skillet and add some coconut aminos or tamari to the skillet.
As they start to cook, add in the curry paste (to your taste- I like it spicy!) and about 2 tsp of coconut oil. Mix well.
I am using this curry paste right now for it. I alternate between the Prik King and the Green Curry Paste of the same brand.
As your veggies start to soften, add in the lentils or cooked chicken and your rice.
Allow those to heat through, and serve!
