As a mom, it is sometimes hard to eat well. For me, it is hard to eat a healthy lunch.
As a personal trainer, Health Education Specialist, and I have a Master’s degree in Health, you would think I would be conscious about what I eat. With kids, I have learned that I do well to just EAT. HA! I grab whatever is there. A spoon full of peanut butter here, a few chips there.. you get the picture.
It isn’t lack of want or know-how to eat healthy. It is lack of TIME. Breakfast isn’t a problem, usually. I can make eggs, oatmeal, or a smoothie while the little man eats and watches his show of the day. Dinner is with my family, so that isn’t too hard either. Lunch on the other hand is my busy time. Baby wants to nurse, the boy wants lunch, and I’m running crazy. Some days, I’m super lucky and my husband comes home for lunch so I can actually eat. Other days, I’m eating random this and that and chips… lots of chips.
After months of not eating well, I knew I needed to fuel my body better. I needed more energy to chase my kids to be honest. I haven’t posted about it, but I went back to work several months ago (surprise!!). Geeze, I need to blog more. Any who, I realized how much better I felt on the days that I packed my lunch for work. It just shows that you are what you eat.
I decided to treat my full time job the same as I did my part time job. I now pack my lunch every day for “work”.
Usually, I do something for lunch using leftovers from the night before.
For example, a couple nights ago, we had turkey, roasted brussels sprouts and sweet potatoes, and green beans.
That night, I packed a lunch for the next day and turned it into a salad. I put leftovers over a bed of spinach and stuck it in the fridge. The next day, I added dressing and pumpkin seeds. It was easy, fast, and delicious.
Okay, so what about those chips? I won’t lie… I still crave something salty with my meal. I’m trying to limit my chip intake. Although I still do eat them, it’s just in moderation now though. I did find an awesome alternative!
SkinnyPop Popcorn! Y’ll, I’m addicted. Last time, I got the dusted dark chocolate and it is a salty/ sweet combo. Love! I’m wanting to try the sea salt and pepper next. I love these because they are gluten free, non-GMO, and most are dairy free.
I have an air popper, so to make it last longer, I have been mixing air popped popcorn with the SkinnyPop and sharing it with the boy.
So good, and much healthier than a half of a bag of chips!
