The other day, a friend of mine was telling me how her daughters made my Spicy Black Bean Burgers.
She said that they were great, but they took a while to put together. Well, of course I had to remedy that!
We were having friends over for burgers, and I decided at the last minute to make black bean burgers instead of fish for myself. So, my Quick and Easy Black Bean Burgers were born.
This is for you Tera, Kelly, and Maritess!
Quick and Easy Black Bean Burgers
- 2 cans black beans, rinsed and drained
- 1 T flax seed mixed with 2 Tbsp water (Or one egg)
- 1 jalapeno, diced
- 1 slice of bread*
- 2 tsp cumin
- 1/4 tsp turmeric
- 2 tsp chili powder
- 2 Tbsp salsa or tomatoes
Mix your flax with water and let sit while you assemble the other ingredients.
Rinse and drain your black beans. Place in large mixing bowl.
Add seasoning and jalapenos.
Stir and slightly mash to combine.
Rip up your slice of bread and add to the mix. Also add in flax (or egg) and salsa/tomatoes.
Mash up to your liking. I like some of my beans a little chunky still.
Cook on a greased skillet over medium heat for 5 minutes each side.
These are not only Luvy approved but meat loving, college student approved.
