Pumpkin Protein Pancake

Hands down, this is my favorite breakfast right now.

In fact, I have had it 5 days in a row.  I have a problem.  :)

Actually, it isn’t really too much of a problem considering it is so fast, filling, and amazingly delicious.  Perfectly worth repeating 5 days in a row right??

I’m going to make this short and sweet today, because I had to leave at 6:45am to be on the other side of Louisville for an appointment.  #whatwasithinking

Pumpkin Protein Pancake

  • 1/4 cup egg whites
  • 1 scoop of protein powder (I used Sunwarrior Vanilla)
  • 2 Tbsp (heaping) pumpkin
  • 1 Tbsp flax
  • 1 tsp cinnamon
  • 1/4 tsp baking soda

Mix everything together in a bowl while your sprayed pan is heating over medium heat.

Pour mix into pan.  Mixture will be thick.  Let cook until it starts to bubble and dry on the edges.

Flip and cook for about 30 seconds to 1 minute more or until cooked through.

Do not walk away and go get dressed…. it will burn.  Not that I would know anything about that.  :)

Top with anything your heart desires!

I topped mine with blueberries, banana, almond butter, and pumpkin butter.  I went light on the nut butters because with my crazy appetite, the last thing I want is nut butters.  Give me more fruit please!

Hits the spot!  This would also be a fantastic as a post workout meal too!

YUM! I had pumpkin protein french toast this morning. Looks like we were totally on the same wave length for breakfast this morning. :)

i have been looking for a good gluten free pancake recipe using pumpkin, I may sub the protein powder for coconut flour yum!

I swear last fall I ate pumpkin pancakes every morning for weeks!! I have only had them once this year!! What’s wrong with me!?! Time to bust out the pans and get flipping!

That looks delic! I’m totally loving pancakes and have been using PB2 a lot, wonder if that would work in place of the protein powder?! I also should start adding flax, great idea!

Yum!! I don’t blame you for having your breakfast on repeat lately…especially since it involves pumpkin and I am already hovering over the line of obsessed! And it’s still so early in the season! Haha

My favorite pancake toppings (lately) have been greek yogurt, cranberries, walnuts and LOTS of cinnamon! :)

I get stuck in my favorite breakfasts too sometimes! Actually, I think it makes it easier cause then you don’t have to think about what you want to make everyday! I love the blueberries on your pancakes … they look so good!

Best recipe ever! :) A little bit of fat, a little carbs and lots of protein! Weeee… What a way to start the day!

I have to say my fav toppings are just Stevia and Cinnamon! I used to love sugar-free pancake syrup, but I try not to go over board on the SPLENDA… When they start making pancake syrup with stevia, then I will DOUSE my pancakes in the syrup! LOL!
