Hands down, this is my favorite breakfast right now.
In fact, I have had it 5 days in a row. I have a problem. :)
Actually, it isn’t really too much of a problem considering it is so fast, filling, and amazingly delicious. Perfectly worth repeating 5 days in a row right??
I’m going to make this short and sweet today, because I had to leave at 6:45am to be on the other side of Louisville for an appointment. #whatwasithinking
Pumpkin Protein Pancake
- 1/4 cup egg whites
- 1 scoop of protein powder (I used Sunwarrior Vanilla)
- 2 Tbsp (heaping) pumpkin
- 1 Tbsp flax
- 1 tsp cinnamon
- 1/4 tsp baking soda
Mix everything together in a bowl while your sprayed pan is heating over medium heat.

Pour mix into pan. Mixture will be thick. Let cook until it starts to bubble and dry on the edges.
Flip and cook for about 30 seconds to 1 minute more or until cooked through.
Do not walk away and go get dressed…. it will burn. Not that I would know anything about that. :)
Top with anything your heart desires!

I topped mine with blueberries, banana, almond butter, and pumpkin butter. I went light on the nut butters because with my crazy appetite, the last thing I want is nut butters. Give me more fruit please!
Hits the spot! This would also be a fantastic as a post workout meal too!
Hope you all have a fantastic Thursday!!
Any fun plans scheduled for the weekend??
What are your favorite pancake toppings?

YUM! I had pumpkin protein french toast this morning. Looks like we were totally on the same wave length for breakfast this morning.
Yes! This kinda reminds me of french toast! I need to make that soon…
I love how easy and delicious this looks! Protein packed too! Can’t beat it!
Thanks love! You would love it!
Anything with pumpkin is a winner in my books:) This looks super yummy! And easy, which is awesome! We need to set up a chat soon too I think!
Yes!! You tell me when! I would love that!!
i have been looking for a good gluten free pancake recipe using pumpkin, I may sub the protein powder for coconut flour yum!
Oh I bet coconut flour would be fantastic!! Let me know how it goes!
This looks amazing! I love my pumpkin! I love to top my pancakes with almond butter! So good!
Oh I know it!! Nut butter makes it so good!
Mmm, I love pumpkin pancakes!
Come over… I’ll make them for you!
Aw that would be so fun!
I swear last fall I ate pumpkin pancakes every morning for weeks!! I have only had them once this year!! What’s wrong with me!?! Time to bust out the pans and get flipping!
Oh girl… I hope you have remedied this by now!!
THIS LOOKS AMAZING! I knew I’d love this recipe. I love everything you do
My all time favourite pancake topping is blueberries
I love blueberries as well!
That looks delic! I’m totally loving pancakes and have been using PB2 a lot, wonder if that would work in place of the protein powder?! I also should start adding flax, great idea!
I don’t know if PB2 would work or not! Let me know!!
Pumpkin has my name written all over it!
Mine too!!
Yum!! I don’t blame you for having your breakfast on repeat lately…especially since it involves pumpkin and I am already hovering over the line of obsessed! And it’s still so early in the season! Haha
My favorite pancake toppings (lately) have been greek yogurt, cranberries, walnuts and LOTS of cinnamon!
I’m so doing cranberries and walnuts tomorrow!! And I agree… you can never have enough cinnamon!!
Yum! Might try this tomorrow
Let me know if you do!!
I’ve been eating a lot of the same breakfast myself latley! I’m totally on an oatmeal kick and I can’t get out of it haha YUM!
oatmeal isn’t a bad kick to be on!! yum!!
i’m craving this for dessert and right now, maybe with coconut ice cream? oh ya! miss you!
OH man… I’m having that for dessert tonight! I didn’t even think of that!
Love it! Simple and delicious! My kinda meal!
Thanks girl!
This looks fabulous! If I wasn’t stuck in my OWN breakfast cycle of #proats, well, I might actually give it a try.
I know… your proats sound amazing!
I get stuck in my favorite breakfasts too sometimes! Actually, I think it makes it easier cause then you don’t have to think about what you want to make everyday! I love the blueberries on your pancakes … they look so good!
I agree… I love not having to decide what to have for breakfast! I used frozen blueberries and just thawed them out… they were perfect!
Best recipe ever!
A little bit of fat, a little carbs and lots of protein! Weeee… What a way to start the day!
I have to say my fav toppings are just Stevia and Cinnamon! I used to love sugar-free pancake syrup, but I try not to go over board on the SPLENDA… When they start making pancake syrup with stevia, then I will DOUSE my pancakes in the syrup! LOL!
Thanks girl! Syrup made with stevia sounds very interesting!! I love me some plain ol maple syrup though…
