Happy Monday friends!
Before we get to the main event, did you all have a good weekend?
We had a pretty relaxing weekend. For the next 3 weekends, we have plans so this was a much welcomed low key weekend.
We did our Spring Clean challenge for last week and next week. Yes, we buckled down and did the entire thing all at once. Woof. Can’t wait to show you pictures next Friday!!
We also did some shopping at Kohl’s and Marshall’s.
I got some shoes.

I’m not a shopper. I don’t like to dig, and I don’t like trying on things. Someone help me.
I had made this recipe once before, but since I’m allergic to cabbage I haven’t had it since. It was a favorite of Luvy’s so now that I’m adding cabbage back into my diet to see how it goes, I thought this was the perfect way.
- 1 cup lentils
- 1/2 head of cabbage
- 2-3 red potatoes
- 1 large onion, chopped
- 4 cloves garlic
- 1/2 tsp caraway seeds
- 1 Tbsp parsley
- 6-8 cups vegetable broth- depending on how soupy you want it
- Saute onion and garlic until softened. Add in potatoes, lentils, cabbage, seasonings, and broth.
- Let it simmer for 45 minutes or until lentils and potatoes are cooked through.
