I love fresh nut butter.
However, I never make my own for two reasons.
1. My food processor is terrible.
2. I’m lazy.
Several years ago when I started using PB2, it was right after I had my gallbladder out and I couldn’t handle any fats or oils. It was a great sub for me then. Now, I do much better with digesting fats.
PB2 is great, but I do miss the healthy, sustaining fat that comes with nut butter.
Then, I had an idea… a great idea if you ask me.
Coconut Peanut Butter
- 2 Tbsp PB2
- 1 Tbsp coconut oil
Mix until creamy.
Super easy… and it is maybe my favorite nut butter right now!
Wait… who said I didn’t make my own nut butter??? 😉
Another great thing about PB2 is there is only 1g of sugar in 2 Tbsp so it isn’t chalked full of sugar.
