Coco-Nut No Bake Cookies

Luvy’s favorite cookie is a “no bake cookie”.  Easy for me, right??

When I was little, we never called them a no bake cookie.  We called them Cow Patties…. kinda fitting if you look at them!  HA!  I suppose the country is coming out in me.  ;)  We all used to get so excited when we would see that our cafeteria had cow patties that day!

I figured I would call these no bake cookies, because you all would be more likely to eat them than if they are called a “Cow Patty”.  

I have always made my cow patties no bake cookies the same way my grandma and mom did.  That was until I was starting to make them, and realized I was out of butter.  

Am I the only one that never looks to see if she/he has all the ingredients before starting to cook??  Yep… do it all the time.

I was determined to make those cookies for Luvy, so I improvised and it turned out better than ever!  Sorry, Grandma.. I have a new recipe now.

Coco-Nut No Bake Cookies

  • 2 cups of organic sugar
  • 1/4 cup coconut oil
  • 1/2 cup milk (I used flax)
  • 3Tbsp cocoa
  • 3 cups oatmeal (gluten free if necessary)
  • 1 Tbsp vanilla extract (make sure it is gluten free if needed)
  • 1/2 cup peanut butter
  • 1/4 cup crushed peanuts

Put peanuts in a pastic bag and crush them.  A rolling pin works nicely for this.

Mix sugar, coconut oil, milk and cocoa in a pan.  Heat to a boil and boil 1 minute.  Stir frequently to keep from burning.

Remove from heat, add vanilla, oats, peanut butter, and peanuts.

Spoon onto waxed paper to cool.

You could also add in shredded coconut instead of the peanuts as well.  We didn’t have any….  Imagine that!  

What add in do you think would be good for the no bake cookies?

Did anyone else call them Cow Patties??

My mom started baking an apple cake over the weekend and realized she didn’t have enough flour or oil. Before she could freak out or run to the store, I suggested pumpkin for oil replacement and oatmeal for some of the flour. It turned out great and my parents loved it!

haha i’ve never heard of anyone caling them cow patties before!! No-Bake cookies have always been in my top three of favorite cookies. My mom would make these all the time. I’m loving the added coconut. Definitely just saved this recipe :) .. I mean I do need to put on some weight, so why not indulge in these?? haha

Haha you’re so cute – I’ve never heard of them being called “cow patties” before! These are some of my mom’s and my favorite cookies though! The recipe I’ve used is a little different, but it’s along the same lines.

Ha ha you are the cutest! I’ve heard of “cow patties” but weren’t sure what they were. These look so good too! I wonder if you could add any fruits like banana or pumpkin? hmmm!

Once I made pistachio nut butter that looked like poo. So I called it pistachio poo.

All that to say I would eat something called a Cow Patty.

In fact, your Cow Patties can get together with MY favorite no-bake ‘cookie’ known as the Haystack (chow mein noodles covered in peanut butter, chocolate, or butterscotch with raisins and/or peanuts) and have a grand old time in the country. :)

These sound so tasty and easy! If they weren’t made with peanuts (allergies :( ) I’d eat them even if they were called cow patties. Would subbing in almonds work?

we always called these “spider cookies” for some reason. I have no clue why, but I know I have always loved them, even with their name being what it is:) This recipe sounds good!

Yay for healthy cookies! I loved no-bakes as a kid and think your idea for adding chopped peanuts is genius :) I think almonds and almond butter would be great too!

Cow patties, huh? Too funny! We always called them no bakes…well unless I tried to make them…then we called them BURNT TAR! Haha! Only I can burn a no bake cookie! See? I was never meant to be a baker! Lol

If I was going to be heavily supervised and made these, I would add some crushed pretzels! MMmm!
