Hands down this is my quick go to meal right now. Good thing Luvy loves this too.
I originally got the idea for this salad from Kath’s recipe.
Just typing this out is making me drool!
Butternut Squash, Lentil, Apple, and Zucchini Hot Salad
- 1 large butternut squash, chopped- or can use 2 large sweet potatoes
- 1 cup of lentils
- 2 large apples, chopped
- 2 zucchinis, chopped
- **optional: chopped grilled chicken or cooked sweet apple chicken sausage
- dressing- see below
- roasted pumpkin seeds
- chopped dates
- 3 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- 1Tbsp maple syrup
- 2 tsp stone ground mustard (adds a bit of a kick!)
- 1 tsp cinnamon
- a couple grinds of salt
Preheat oven to 450.
Chop butternut squash or sweet potatoes. Place on cookie sheet and roast 20-25 minutes or until fully cooked through.
Cook lentils according to package directions. Don’t over cook these- you want them firm and not mushy.
While these are cooking, mix together your ingredients for your dressing.
After these two are done, place apples and zucchini in a large skillet or dutch oven. Add about 1 Tbsp olive oil and cook over medium high until they are softened.
Remove from heat and add in cooked lentils, squash, and chicken if using. Stir well.
Pour dressing over and toss.
Serve over spinach and top with pumpkin seeds and dates.
